It all started when my friend posted on her instagram stories a recipe that she found on TikTok for sticky chicken drumsticks! I was like – mmmm – those sound good but I am no longer a huge fan of chicken legs. {The backstory is that I OD’d on them when I was pregnant with Levi and ate them cold every morning for breakfast for about 5 out of the 9 months; no judgements please haha!} I checked out the recipe, got inspired and completely revamped it into an entirely different dish! Today, I present to you the most yummy boneless sticky chicken thighs recipe you will ever eat! Bonus that it’s crazy easy to whip up and your whole family will love it too!

I mean, mine loved it so much that I made it twice in 3 days!! It was THAT good! What’s really wild though is that I didn’t even mind making it again because it was so simple! And when I say simple, I mean, if I can do it, you can do it!!

Why Chicken Thighs??

I literally never use thighs. Actually, this is definitely the first time I have ever cooked chicken thighs as I have been a chicken breast girl ever since I could remember! But for some reason, I knew thighs would be the way to go with this recipe. They are juicier and more tender than breasts, typically not as thick, and when I think of sticky anything, I think of dark meat! So glad I went with my gut because they just WORKED with these flavors!

How to Cook Chicken thighs

Wondering how to cook them?? Well wonder no more! While the original TikTok recipe was done on the stovetop, I opted for the oven because, yep, you guessed it, it’s EASIER! PRO TIP: put non-stick tinfoil down on the oven pan first for easy clean-up when you’re all done!

The Perfect Marinade

I truly believe that the reason why this sticky chicken thighs recipe is 100 is because of the perfect marinade that I’ve created! It’s crazy flavorful and you probably already have the ingredients in your pantry or refrigerator. I made it gluten-free for my fam but feel free to use regular soy sauce instead of tamari. The original marinade included chili but that’s not my thing so I omitted it, as well as completely changed the amounts of all the other ingredients. I know this ratio is the perfect one!

What to serve with baked chicken thighs

I think these sticky chicken thighs go great with a starter salad, and then you can serve sticky rice or herbed potatoes on the side. Plus, a steamed vegetable like broccoli, cauliflower, or sugar snap peas!

Reheating chicken thighs

These are best eaten the day they’re made but you can totally keep leftovers in the refrigerator and then simply microwave to reheat. Easy peasy!!

Easy dinner recipe for Boneless Sticky Chicken Thighs

Yummy Boneless Sticky Chicken Thighs to Cook in the Oven Tonight!

The most delicious sticky chicken thighs that will be on your weekly dinner rotation for years!

Servings 4 people

Equipment

  • 1 sheet pan top with non-stick tin foil!
  • non-stick tin foil

Ingredients
  

  • 2 packages boneless, skinless chicken thighs each package should be between 1-2 lbs of meat
  • 6 cloves garlic, chopped I always recommend buying this in jars and keeping in your refrigerator to save time!
  • 2 tsp crushed ginger I buy them in frozen cubes! Each cube is a tsp. It's so easy!
  • 4 tbsp honey
  • 1 cup soy sauce or gluten free tamari

Instructions
 

  • Preheat oven to 450 or 435 convect bake.
  • In a mixing bowl, combine the garlic, ginger, honey, and soy sauce.
  • Marinate the chicken in the mixture for 10-15 minutes. If you have some time, feel free to cover + marinate for longer in the refrigerator.
  • Cover oven pan with non-stick tin foil, lay thighs down on it, separated. Bake in oven for 40 minutes, flipping once halfway through.
  • Transfer the remaining marinade from the bowl of chicken {pre cooked} into a small stove pan. Bring it to a boil and stir, add 2 tsp cornstarch and stir until the marinade is thick and saucy!
  • Take the chicken out of oven after 40 min, plate and then top with the sauce.
  • Feel free to garnish with sesame seeds and chopped green onions! Enjoy!

Notes

This isn’t a necessary step but before you put the chicken in the homemade marinade, fork the top of it with some light holes. It will allow the juices to really get in there!!
