RECIPE: 3-Ingredient Pesto Provolone Chicken Roll-Ups! :: I Adore What I Love Blog :: #iadorewhatiloveHelllllllo again, friends! I’m coming atcha today with the EASIEST and most delicious dinner-time meal that your whole family will love. And when I say love, I mean they are going to be asking for seconds, thirds, and fourths!!!!! Because it is THAT good!

Oh! And your house is going to smell insane, too. It’s also the most perfect main entree part of a meal for when you’re having company over AND it’s super easy to put the roll-ups into a container and bring to a friends house! I actually was apart of a meal train when my sister-in-law had surgery and made this for my brother’s family because I knew it was kid-friendly, everyone would love it, and was easily transportable. Guess what? It was a total win win win!

Ok, what else can I say about this dish?? Well, I make it in my air fryer because the air fryer is EVERYTHING {I’ve talked about that time and time again – mainly in this post} but if you don’t have one, you can totally bake it. So no worries there – if you have an oven, I’ve got you!

RECIPE: 3-Ingredient Pesto Provolone Chicken Roll-Ups! :: I Adore What I Love Blog :: #iadorewhatilove

  • 1 pound THIN chicken breasts – there should be 5-7 in the package
  • 1/2 cup of your favorite fresh basil pesto
  • 1 small thin slice of provolone cheese per chicken breast
  • Salt + pepper to taste

  1. Preheat your air fryer using the “warm-up” setting. *For directions using the oven, see below.
  2. Salt + pepper both sides of your chicken
  3. Spread a dollop of pesto out onto one side of each thin flat chicken breast
  4. Starting from one end of the uncooked chicken, tightly roll it up. Repeat for each chicken + pesto combo. –> Brody did this part for me and LOVED it. I made sure to have him wash his hands before and directly after. But he was very proud of his rolls and it was a great way to get him involved!!
  5. Line the inside of the air fryer {but be careful not to burn yourself since you just heated it up!} with nonstick tin foil and then top with the roll-ups.
  6. Air fry at 400 degrees F for 15 minutes, turning once mid-way using kitchen tongs.
  7. Top each roll-up with your thin slice of provolone cheese. The cheese should cover the roll-up entirely.
  8. Continue to air fry at 360 degrees F for 4-5 minutes. Check it after 4 minutes to see if the cheese is melty and bubbly. If it’s not, continue air-frying for another minute. Let rest for a few minutes before removing from the air fryer.

*If using your oven to make these, preheat it to 400 degrees F. Spread out your nonstick tin foil sheet onto a pan, put the roll-ups on top and they can cook for 15 minutes, turning once mid-way. Then, top each roll-up with the slice of provolone and broil for 3-5 minutes or until the cheese is melty and bubbly! Let rest for a few minutes before digging in!

There ya have it!! Literally this is a fool-proof recipe that ANYONE can do!!!!! And the best part – there are literally only 3 ingredients!!!!! Insert happy dance emoji here! Oh! And the possibilities of what to serve it with are endless – a salad, rice, potatoes, sautéed mushrooms, steamed asparagus… you can’t go wrong. Promise!!
