Every mom wants more energy, right?! Especially during quarantine. Well, I’m here to tell you that you can have your energy… and M&Ms too. LOL. I whipped up these healthy no-bake energy bites a few weeks ago with the boys and between me, them, and Isaiah, the bites lasted, ohhh, about a whole 10 minutes. But that’s okay because they’re made with all natural, completely 100% whole foods {ok fine, minus the M&Ms but you can omit them if you want}. Can you say YUM?!

It should be noted that you can really create your own recipe from the base ingredients {oats + honey + nut butter}, adding or leaving out any of the “solid” ingredients that I put into mine. Don’t like coconut? Don’t add it into your bites! LOVE pistachios and have them in your pantry? Throw them in! Why not?! We only live once!! Either way, I’m sure whatever concoction you come up with will be delish! Also, it should be known that when I say that the M&Ms are for the kids, I really mean that they are for ME. Bahahahhaaha. Don’t judge but I love me some M&Ms.

And the boys helped make them with me! Actually, they pretty much MADE THEM! Yes, I guided them but they literally did the entire thing from beginning to end. And loved every second of it.


HEALTHY NO-BAKE ENERGY BITES {MADE WITH M&MS FOR THE KIDS – AND ME!}
Ingredients
- 1 cup dry oats I used gluten-free quick cook oats – any kind works though!
- 1/4 cup almond butter or any type of nut butter you fancy
- 1/4 cup honey
- 1/4 cup raisins
- 1/4 cup unsweetened coconut flakes or shredded coconut to take the flavor over the top, you can toast the coconut! I did not!! Ha.
- 1/4 cup M&M’s mini m&ms would probably work even better!
- 1 tsp cinnamon
- dash of salt
- 1/2 teaspoon vanilla
Instructions
- Combine all ingredients in a medium size bowl. It should be sticky and come together pretty easily.
- Refrigerate the mixture in the bowl for at least 45 min to an hour. {30 minute minimum!}
- Scoop out a tbsp size amount of the mixture and use your hands to roll them into balls. Repeat process until you've used all of the mixture to make at least 12 energy bites!
- Good luck saving them for the future {it's impossible} but if you do, store in the fridge for up to a week or you can freeze them too!

Best part of the process, though?! EATING THEM. Yes, for the kids but also for you. I give you my full permission to grab at one anytime your exhausted mama heart desires. WE ALL NEED THE ENERGY!!!!

Because I do… we’ve since made a few batches which don’t live to see the day! We seriously can’t get enough!! Ok, off to make more! And I’ll probably double the recipe this time. Not sure why I never thought to do that before?!
