This addictive chilled black bean and corn dip recipe is literally IT for me. It’s crazy to think that I’ve been making it for 15+ years already, after a friend passed the recipe on to me while we were in college together! Since then, though, I’ve changed it a little and perfected it over the years. It is seriously the BEST! My whole family and all my friends are obsessed and I know you’re gonna love it too!

It’s no surprise that this recipe has become a staple at all my summer parties (and truth be told, any gathering throughout the year), and for good reason. Friends request it, plates are cleaned within minutes, and the recipe is always in demand. Plus, it’s so simple to whip up, surprisingly healthy, and really filling, making it a win-win for everyone involved.

The best ever easy-to-whip-up and totally satisfying black bean and corn dip recipe!

Ingredients
  

  • 1 can sweet yellow corn
  • 1 can black beans
  • 3/4 cup fat-free feta cheese crumbles
  • 2 handfuls of sliced scallions
  • 1/4 cup apple cider vinegar
  • 1/4 cup grapeseed oil
  • One bag of @tostitos Scoops Chips

Instructions
 

  • Drain and wash the canned corn and beans, then throw into a bowl
  • Add all other ingredients into the bowl and carefully mix well
  • Chill for at least 2 hours in the fridge prior to serving for the best flavor profile (this is optional but it's better this way, in my opinion!)
  • Use the Scoops chips to scoop it up and enjoy!!!!

Pro Tip: For larger gatherings, double or even triple the recipe. Once you taste it, you’ll understand why – because it’s so addicting and delicious, it goes fast!!

I highly recommend NOT messing with this recipe. Like I said, I have changed a few things over the years but now it is perfect in every way. Substitute or add-in at your own risk (AKA I wouldn’t do it!!!) If you don’t want to use grapeseed oil, however, feel free to substitute for canola oil. I would not use olive oil as it will change the entire flavor profile!!

If for some crazy reason there is some left over, keep it in your refrigerator. It’s even better the next day!

I would stick to eating this dip with Scoops! I’ve tried other various chips but nothing compares to eating it with Scoops. Just sayin’
