Preheat your air fryer using the “warm-up” or "preheat" setting. *For directions using an oven, see below.
Salt + pepper both sides of your chicken
Spread a dollop of pesto out onto one side of each thin flat chicken breast
Starting from one end of the uncooked chicken, tightly roll it up. Repeat for each chicken + pesto combo. –> Brody did this part for me and LOVED it. I made sure to have him wash his hands before and directly after. But he was very proud of his rolls and it was a great way to get him involved!!
Line the inside of the air fryer {but be careful not to burn yourself since you just heated it up!} with nonstick tin foil and then top with the roll-ups.
Air fry at 400 degrees F for 15 minutes, turning once mid-way using kitchen tongs.
Top each roll-up with your thin slice of provolone cheese. The cheese should cover the roll-up entirely.
Continue to air fry at 360 degrees F for 4-5 minutes. Check it after 4 minutes to see if the cheese is melty and bubbly. If it’s not, continue air-frying for another minute. Let rest for a few minutes before removing from the air fryer.
