OMG honey + pistachio + salmon equals INSANITY {the good kind!!} and I’m kind of mad at myself for not coming up with this trio of perfect ingredients on my own. There’s a local restaurant that has this on the menu {for any of my North Shore mom readers wondering, it’s Player’s Grill in Deerfield!} and it is so. freaking. good. Every time I go there I say I’m going to try something new but then always always always end up ordering this, yet again! Because it never gets old and I love it.
No, I didn’t ask for their recipe and my version is probably not the exact same as theirs but it’s pretty damn close and tastes just as amazing! {not to toot my own horn or anything lol} I can’t wait to share it with you!! Did I mention that it’s suuuuuper easy and obviously really healthy! I love to pair salmon with rice but you can totally choose whichever sides you like best {i.e.: veggies, potatoes, salad – all would be yum!} Recipe below!
INGREDIENTS
- Fresh Salmon – I typically buy Wild Alaskan Salmon at my local grocer and ask for 4 pieces {one for each family member – we all love it!}
- 6-8 oz Dry Roasted & Unsalted Pistachio Nutmeats – I always buy the Trader Joe’s “halves and pieces” bag since it’s typically the cheapest!
- 1 cup honey – more or less depending on your liking! You truly only need enough to cover the pistachios.
- Salt, to taste, if you desire.
DIRECTIONS:
- Preheat oven to 425 degrees F.
- On a baking pan covered with a sheet of nonstick tin foil, lay out your salmon pieces in a row and salt the tops, to taste, if you desire.
- In a food processor, chop all your pistachio nuts. While I have a larger-sized Cuisinart and love it, I also have this mini one that I use the most! Highly recommend.
- Put the chopped pistachios in a bowl and add honey. Cover the nuts fully. Feel free to add more honey if you wish.
- Taste the honey-pistachio mixture and top it onto the salmon. I put a spoonful on each and then spread the mixture out.
- Cook for about 23 minutes {that’s my magic number on my oven, haha!} or until done, take out of oven and let sit for a minute.
- Top with a sprinkle of honey, serve with your fave side{s} and savor the deliciousness! BON APPETITE!!!!!!!
