Ahhh can you believe that the 4th of July is next week?? Like, how is that possible you guys?!?! Summer literally just began but it’s also going by way too fast already, dontchathink? Anyways, let’s talk PEANUT BUTTER!! {PS if you’re allergic or have nut allergies in your family, keep reading!!} Have you ever grabbed a spoon, dug it into your favorite PB, and just went for it?? If you have, then I’m not even going to explain what I mean by “went for it” because you’re clearly in the club and we get each other ;) Andddd if you’re in the club then you’ll most definitely want to keep reading because I have a pretty delish recipe for you to try!
Well, I probably should be embarrassed to even consider calling this a recipe because it’s SO SIMPLE. I’m actually writing this post to more share the idea with you, rather than share the “recipe” because I know that it would be perfect for your upcoming Fourth of July celebrations {and beyond!}. But with that said, it only involves three easy steps and two ingredients that you DEFINITELY already have in your kitchen. Which is a total positive if you ask me!!
Plus, your kids can get involved in “making it” too!! Now, if you do have allergies in your fam, and you’re still reading this post {which I hope you are!!!}, this recipe totally works with your favorite Peanut Butter alternatives. Whether it’s Sunbutter, Wowbutter {our personal family favorite and what I give to my kids in their school/camp lunches!} or Don’t Go Nuts Chocolate Butter, the end result will still be awesome. That’s a promise!! And if you just prefer almond butter or cashew butter or ANY butter to regular peanut butter, go for it. You have my permission to play around with this non-recipe, recipe! Ha.

Peanut Butter & Jelly Bark Recipe:
Ingredients:
One Jar of your Favorite Nut Butter {allergy friendly butters work great, too!}
A few dollops of your favorite Jelly or Jam
Directions:
Top a baking sheet with parchment paper, then take the entire jar of PB and pour it on top. Spread the peanut butter out pretty well on the baking sheet. Cover the baking sheet {I use Press ‘N Seal Cling Wrap} and freeze for at least 3 hours or overnight. Once frozen, take it out of the freezer and top with a few dollops of jelly. **If you want to mix the jelly into the peanut butter before freezing, that would work too! And might be less messy for tiny fingers to eat with :) Break up the frozen peanut butter + jelly with your hands to create bark. Continue to freeze until you want to indulge!!
That’s it!! Pretty simple, right?! For leftovers, keep the bark in your freezer in an airtight container, separating it with parchment paper. I actually have some in my freezer right now and every so often, I’ll grab a piece of bark to indulge in… but I never feel that bad because it’s totally portion controlled and peanut butter is filled with all sorts of good stuff for you!
